Fun Friday - Breakfast For Dinner is More Fun

I’m laughing writing this post because I had a completely different dinner I wanted to post as my first #messymemories #funfriday but of course, life gets ya every time and you improvise! So stay tuned for our mermaid pasta that is yet to come!

Growing up, my mom would make my family pretty awesome breakfasts every morning before school. Cereal was a rarity for breakfast on weekdays, so when she’d make breakfast, she’d make eggs and bacon, biscuits, french toast, oatmeal, or pancakes. It was awesome.

When I became an adult and a mom of multiple children, our mornings have always been rushed and mad dashes out the door to get to school on time and “mom! slow down! You need to obey the law!” because of … cough cough… too many speeding tickets. So I’ve really missed breakfast the past handful of years of my life.

A few years ago I decided I’d incorporate breakfast foods for dinner at least 3 times a month and to be honest, my kids ask for pancakes 5 out of the 7 days a week. So…. with that being said, I’m sharing our most favorite pancake recipe from Joanna Gaines cookbook ‘Magnolia Table”. Hope you like it!

All of your ingredients. And as my kids always say “Don’t forget the eggs!” (common mishap in my life hahaha)

My favorite part didn’t used to be my favorite part. I had a hard time with messes but have since decided its more fun to have kids make messes than it is for me to micro manage the situation. My kids all get their own measuring cups and do their best to measure what ingredient they get to put in.

Please note, we go through A LOT of baking soda/powder, salt and egg spills. It’s quite common to hear one of my kids say, “mooooooomm we need another egg!” or “get the spoon mom, we got shells.” Hence the little mounds of baking soda and salt haha!

Once all the dry ingredients are in, without fail, one of these three little rascals blow in the dry ingredients. They like to see the powder fly up everywhere. It’s huge mess but its hilarious. If you look closely, you’ll see a small dusting of flour over this little cherubs cheeks and eyelashes. Pure delight I tell ya!

While my kids mix the dry ingredients, I mix the wet ingredients. Did I mention this recipe takes 10 times as long to make than it should? :-D

Teddy so badly wanted to help. He kept pushing a chair around to get in on the action. He finally gave up and headed for the tupperware drawer.

This is what your batter should look like. Please note my trusty ol’ handheld vacuum to the right. A moms best friend and sucker of flour, baking soda, and dry ingredients.

After you’ve let your batter rest, get that griddle out and get that batter on! We add chocolate chips to our pancakes. It started one year when my middle child wanted chocolate chips. We bargained and I told him I’d add them to pancakes. He won, I won. Win win! It’s since stuck and we put them in ever time. Also- we have yet to make a perfectly round pancake. I don’t think it runs in our blood.
