So this morning my daughter made eggs for breakfast. She put in too much milk, and not enough salt, but whatever… it’s OK. Let the chef be the chef… Then my son so kindly told me that her eggs taste sooooo much better than mine. I can’t decide if I am mad or happy. “Sigh” Maybe I really am the sous chef in the family.

Tonight my son had lots of homework, because growing up is rough, so my daughter made her famous guacamole, which has won fake competitions, so you know it’s going to be amazing!

But really … It’s really good.

Let’s get started!

But first, I want to get you started with some pro tips for your avocado and lime selection. Just kidding! There’s no such thing as a professional avocado buyer! But these tips really work!

To find the perfect avocado, find one that barely gives when you touch the top and bottom. Then to make extra sure, pull out the little plug, and make sure you have a nice light green color with no brown streaks. And as far as lime goes, at least in this part of the world, the less textured the sides are, the more likely you will get some good juice out of them. At 2 limes for $1, you want to make sure they are good!

INGREDIENTS

4 avocados
7 limes - maybe more, maybe less
Salt
2 tomatoes
1 onion
1 Jalapeño

and then the chef surprised me with 2 ingredients, which are kind of her secret weapons:
Fresh Basil
White Truffle Oil

PROCESS
So apparently cutting avocados is “like super dangerous” (said in a ditzy voice) so “like be super careful, mmm kay?” But seriously, it’s not that hard to be safe. Cut is down the middle - stab it with your knife, and twist. Then hit it on the side of the trash can on the handle end, and there you go!

Have the kids spoon them into the bowl and smash them up. We used to use a fork until we invested in this smasher thingy, and it has worked wonders!

Then comes the fun part. Squish all those limes in. If you are feeling like throwing your money around, don’t worry about squeezing the limes after your kids try… because, you guys… 2/$1! If you are buying limes in Mexico, don’t even worry about it. (It’s OK… I’m not jealous!)

You are going to want to put the amount you think you need… and then double that. You kinda want an avocado soup at this point… A creamy soup though... Put some salt in. I don’t know how much. She just puts some in her hand and pours it in. If you need more, put more. The good thing is, their hands are tiny, so it is hopefully hard to get too much.

Stir it all together.

While “chef” is working, you, as sous chef can prepare the rest of the vegetables. Chop up your tomato, Tell the kids some sentimental story while you cut the onion, so they think you are super passionate about it when you cry, and then think about how much you really love your kids as you decide if you are going to take the seeds out of the jalapeño or not. I also ended up chopping up the basil last minute, because “Chef” likes surprises like that.

Throw in the good stuff and stir away!

If you are wanting to use truffle oil, put in about a teaspoon.
