Lemon Glazed Cookies

Since as long as I can remember, I’ve loved anything with lemon or lime. I found this recipe recently online and I had all the ingredients so I decided I whip them up and they did not disappoint! I found this recipe from twopeasandtheirpod. Just look up lemon glazed cookies and it’ll bring you right there to it.

But if not, here’s how you do it!

Ingredients

2 1/4 c all purpose flour

1/2 tsp baking powder

1/2 tsp salt

3/4 c granulated sugar

2 tbsp lemon zest

1 c unsalted butter at room temperature

1 egg

1 tsp vanilla extract

Lemon Glaze:

1 c powdered sugar

4-5 tsps fresh lemon juice

Preheat oven to 350 degrees

Add your granulated sugar and lemon zest into a bowl. With a fork, stir these two ingredients together till you can smell the lemon popping out.

Beat butter and sugar/lemon mixture until light and fluffy. Beat in egg and vanilla and mix until smooth. Slowly beat in the flour mixture until blended. It’ll look the above picture.

Drop dough by tbsp and flatten them out into little disks with your hands.

Bake 10-12 minutes or until cookies are just set and lightly golden. Cool cookies on baking sheet (or tin foil like I did) and cool completely.

While cookies are cooling, make the glaze. powdered sugar and lemon juice (I doubled the glaze part.)

Dip the top of your cooled cookies into the icing and then place them back on your rack or foil to set.

Voila you’re done! Enjoy! Ps- these cookies would be great used as a tea cookie if you drink tea :)
