Salsa de Molcajete

It’s Fun Friday!!! This one is so easy and fun for kids. If you don’t have a “molcajete” (mortar and pestle), you can make it by smashing with a potato smasher or forks. It is a great recipe to entertain the kids for a while.

Ingredients

  • 3 roma tomatoes

  • 2 or 3 cloves of garlic

  • 1 jalapeño

  • about a tsp of salt

Let’s get started!

1 - Place tomato, garlic and jalapeño on a hot skillet. Turn until all sides are browned.

2 - Once the garlic is browned, add it and the salt into the mortar. Spin around until it forms a paste until you almost can’t see it. It does a great job of flavoring the salsa.

Note: You can choose to do the jalapeño before or after the tomato. They both have their pros and cons. Before makes the jalapeño easier to break apart, but makes the salsa spicier.

3 - Add the jalapeño after removing the seeds and stem carefully. I use a paper towel to hold the chili (it is still very hot!) and a sharp knife to cut it out.

4 - Add in tomatoes one at a time. If you want a big mess, let them do it by themselves. The tomatoes explode a little, so I recommend doing the first little bit yourself.

5 - Taste and add extra salt as needed.
